Traditional Greek Keftedes with a feta & sweet pepper salad

Why not add a Mediterranean twist to your dinner plate tonight? These delicious keftedes are a family favourite of mine, the recipe has been passed down from my Yiayia (Grandmother) who made them in the village as a young girl. They're perfect as an appetiser or main meal ♥

Ingredients -

3 slices of white bread, torn into pieces soaked in 3 tbs water

1/2 pound ground beef (or lamb if you prefer)

1 diced onion

1/2 tsp paprika

4 tsps dried mint

1 tsp salt

ground black pepper to taste

3 tomatoes (optional)

2 grated potatoes

2 eggs

Vegetable oil for frying

Preparation method -

Prep time - 6 mins

Cook time - 10 mins

Serves - 4

Method -

1. ) Place torn white bread into a bowl & soak in 4 tbsp water & set aside. This is a very important step as you don't want dry, flaky keftedes

2.) To a large bowl add the grated potatoes, chopped toms, diced onion, eggs, ground beef, moist bread & spices. Mix well using your pretty, washed hands

3.) Roll the mixture into oblong shapes, measuring 1- 2inches in diameter.

4. ) Heat 1 inch of oil in a large frying pan over a medium heat. To the hot oil add half the batch of your keftedes. Allow them to cook for approx 10 mins, turning regularly. Once they are brown (& no longer pink in the middle) remove from the pan & place on kitchen paper to soak of excess oil. Add the rest of the batch to the pan & cook in the same way

5.) Serve these delicious Greek delights with a feta & sweet pepper salad with a large dollop of natural Greek yogurt. If you want to make a larger meal out of these keftedes simply make a tomato & basil rice to accompany them!
