Moist banana cake with buttercream icing

This super easy banana cake recipe is literally my 'go to' when I have browning bananas or just fancy some tea & cake. It's super simple & so yummy, enjoy!

Ingredients -

Cake batter -

2 over ripe bananas

Optional dates

1 cup of sugar (preferably brown but white will work too)

125grams softened butter

2 eggs

1/2 teaspoon vanilla extract

1/3 cup of milk 

1 & 1/2 cup of self raising flour

2tsp baking powder

1/2 tsp bicarb soda

Buttercream icing -

2 cups icing sugar

140grams of softened butter

Milk as needed (approx 2 tsps)

Preparation Method

Prep time- 10mins

Bake- 45-60mins

Serves- 6-8

1.) Preheat oven to 150c

2.) Mash the bananas 

3.) Add the bananas, sugar, butter, eggs & vanilla extract to a large bowl & mix for 2 mins (4mins if mixing by hand)

4.) Add the milk, bicarb soda, baking powder & flour to the mixture & mix well

5.) Pour the mixture into a greased making tin

6.) Bake for 45- 60 mins depending on the depth of your baking tin- (check cake is cooked by poking a skewer or knife in the middle of your cake)

7.) Once cooked remove from oven & allow to cool on a cooling rack

Buttercream Icing -

1.) Pour 2cups of icing sugar into a mixing bowl followed by the softened butter

2. Mix well

3.) Add the milk a tsp at a time until the icing forms a smooth but firm consistency

4. Spread evenly over your delicious cake & enjoy! (If you prefer you can cut your cake in two horizontally & ice the middle of your cake & the top like a Victoria sponge.)
